Tartar Sauce

Tartar sauce (sometimes spelled as "Tartare sauce") is a popular sauce eaten as a condiment. It is named after the Tartar people, an ethnic group living in Russia, however the sauce originates from Europe, probably France. The reason it is called Tartar sauce is because when it was first devised, it was intended to be eaten with steak Tartare, which is a dish of finely ground or chopped beef or horse meat, and which does gets its name from the Tartar people - according to legend, the nomadic Tartar people did not have time to cook when travelling on the steppes of Russia and Central Asia, and instead tenderized their meat by placing it beneath their horse saddles.

Although originally devised to be eaten with steak Tartare, and still often eaten this way, for most people, Tartar sauce is more familiar from seafood dishes. It is very popular when used as condiment with fried or battered fish, calamari, or other such items.

There are many different recipes for Tartar sauce, however in all cases they are based on mayonnaise, and contain finely chopped vegetables (usually pickled cucumber, capers, and chives or onions). Some recipes also add other ingredients such as lemon juice, olives, chopped hard-boiled eggs, yoghurt, horseradish, mustard or Worcestershire sauce. And while you can buy ready-made sauces from most supermarkets, you will probably enjoy the sauce most if you make it yourself - that way you can vary the recipe to your exact preference. In any case, regardless of whether you make your own sauce, or buy a ready-made version, be sure to serve it cold - it tastes much better that way!
